TIMO VERMENTINO SALENTO IGP 2021

San Marzano is a small town in Salento, in the southeastern corner of Italy. In 1962, 19 vine growers combined their efforts to establish ‘Cantine San Marzano’, where this elegant white wine is produced. Today this cooperative has grown significantly, with more than 1,200 vine growers. One of the region’s most famous wines is Primitivo di Manduria, a dark purplish, rich and spicy wine. The vermentino varietal grows on the sand dunes of the coast. The proximity to the sea and the influence of the strong oceanic winds temper the warm climate. The wine has been fermented and aged in stainless steel tanks to maintain the freshness and the purity of the fruit.

Its name ‘Timo’ refers to the thyme bushes that grow along the rocky shoreline of the sea. The straw yellow colored Timo Vermentino combines a delicate perfume of white flowers with notes of citrus. Elegant, and fresh on the palate with hints of green apple, thyme and rosemary. The light body texture with a lovely acidity and a zesty finish pairs perfectly with seafood.
